Canh bầu nấu riêu tép - dạy nấu ăn

1. Sơ chế
- Bầu cắt sợi. Tép dùng cối giã nhuyễn, cho 1 lít nước vào rồi lọc bỏ xác tép lấy nước.
- Hành lá, ngò rí cắt nhỏ.
2. Nấu canh
- Đun sôi nước tép, để lửa nhỏ cho riêu tép đóng lại, vớt ra để riêng, đun sôi nước lại, cho bầu vào nấu, nêm 1m muối, 1/2m hạt nêm , 1/2m bột ngọt, cho riêu tép vào trở lại, để 1,2 phút rồi tắt lửa.
3. Cách dùng
Múc canh ra tô, rắc hành, ngò, tiêu và hành phi lên trên, dùng nóng.

Chọn tép còn sống, mình trong và láng bóng là tép ngon.
Cho nước vào từ từ, lọc thành nhiều lần để lấy được hết chất trong tép.
