How Popular Cookware Items Increase Your Risk of Autoimmune Disease and Neurological Damage

The study, published in Environmental Research in 2026, analyzed blood samples from 439 U.S. participants. The group included people with MS, healthy controls, and people with two neurological conditions that closely resemble MS. Researchers measured three PFAS chemicals: PFHxS, PFOA, and PFOS.
All three substances appeared in more than 99.5% of participants, reflecting how thoroughly these compounds have accumulated in the American body.
The chemical showing the most alarming pattern
Higher overall PFAS exposure was associated with roughly 50% greater odds of MS. Among women, the figure rose to approximately 63%. One compound, PFHxS, showed the strongest and most consistent link.
For each measured increase in PFHxS blood levels, the odds of MS rose 53% overall and 56% among women. People with the highest PFHxS levels were more than 3.5 times as likely to have MS as those with the lowest levels.
PFHxS is particularly difficult to eliminate. The human body takes up to 35 years to clear half of a given PFHxS load, meaning early exposures accumulate across decades. Unlike PFOA and PFOS, which U.S. manufacturers largely phased out, PFHxS remains in active commercial use in stain-resistant textiles, food packaging materials, and some firefighting foams. Researchers also noted that because PFHxS lingers so long, elevated blood levels almost certainly reflect long-term prior exposure rather than recent disease activity.
Why this study stands apart from earlier work
The research team did something no prior U.S. study had attempted. Rather than comparing MS patients only with healthy controls, the team also compared PFAS levels with those of people with NMOSD and MOGAD. These are two neurological conditions whose early symptoms are nearly indistinguishable from MS.
Women with MS had consistently higher PFHxS and PFOA levels than all three comparison groups, including the other neurological disease groups. That specificity matters considerably. Elevated PFAS was not a general feature of neurological disease. The pattern pointed specifically toward MS.
The study also extends findings from two Swedish research groups published in 2025. Together, those groups analyzed blood from more than 1,800 people and found similar results, particularly among women. A separate 2025 study linked PFOS exposure to MS and identified specific inflammatory and cellular pathways through which these chemicals may damage neurological tissue over time.

Start by eliminating the most concentrated sources of PFAS from your kitchen and daily food habits. Nonstick cookware coated with PTFE releases PFAS at cooking temperatures and should be replaced with stainless steel or ceramic alternatives.
