Dressing ingredients

  • Chicken breast: 4 boneless, skinless chicken breast halves, cooked and shredded. I grilled whole chicken breasts fresh for this recipe, but you could use rotisserie or leftover chicken as well.
  • Mandarin oranges: 1 small can, drained. These add a nice sweetness that complements the dressing perfectly.
  • Green onions: 3 chopped green onions give the salad a mild onion flavor without being too overpowering.
  • Sesame seeds: 1 tablespoon, toasted. Toasting the sesame seeds enhances their nutty flavor.

  • 2 tablespoons brown sugar

  • A 1/4 cup of vegetable oil
  • 3 tablespoons rice vinegar

Salad

  • 1/2 cup La Choy dry chow mein noodles
  • 1 head iceberg lettuce, rinsed and chopped
  • 4 boneless skinless chicken breasts halves, cooked and shredded
  • 1 small can mandarin orange slices, drained
  • 3 green onions, chopped
  • 1 tablespoon sesame seeds, toasted

Instructions
  1. Make the dressing. In a small container, combine brown sugar, soy sauce, sesame oil, vegetable oil, and rice vinegar. Whisk or cover the container and shake to mix. Put dressing in the refrigerator for 30 minutes so the flavors can blend.
  2. Prep salad ingredients. Shred the chicken, chop the lettuce, drain the oranges, chop the onions. To toast sesame seeds, heat a small skillet over medium-low heat. Add seeds and stir. Watch them carefully as they can burn easily. Heat and shake the pan until they become fragrant and darken slightly.
  3. Make the salad. In a large bowl combine iceberg lettuce, cooked chicken, mandarin oranges, green onions, and toasted sesame seeds. Chill for 10 minutes in the refrigerator.
  4. Finish and serve. Just before serving, add the dressing and toss. Top with rice noodles and serve.
