When I was a child we did not get to eat out in restaurants as a rule. It was only when we were moving house that my parents actually took us out for a meal.  I remember when we were moving from Manitoba to Nova Scotia in the summer of 1966, we got to eat out in lots of restaurants along the way and we kids were in heaven!
My father made the journey by driving down through the states and across to the East.  We got to stay at Howard Johnson’s motels and eat in their restaurants, and even at Denny’s, which was a real treat, as was the Big Boy.  These things made what was a long and boring trip much more exciting. At least they did for me. 
My father was not a person who would stop to check out the world’s largest ball of string.  Once he started driving the car, the only stops were for gas, food or sleep.  B-O-R-I-N-G.
Breakfast Hammy 
I was wanting a breakfast for supper kind of a meal today.  I wanted to recreate some of those restaurant treats that I had enjoyed as a child.  I know memory is very selective and I wasn’t sure that I would even be able to find anything similar to what we had had back then.
 I took a look over the Denny’s restaurant menu. We have no such restaurant here where I live.  Their Moon’s Over My Hammy sandwich looked really delicious. I thought to myself, I can do that.
I did check out a few versions online, to see if anyone else had done this, and there were quite a few. After seeing them, however,  I decided there was no reason to re-invent the wheel.  I saw versions that used garlic bread for the toasted bread. Other’s that used French toast for the toasted bread.  A bit over the top to say the least.
I decided to keep it simple and to stay as true to the original as possible, which on the Denny’s menu calls it a Ham and Scrambled Egg Sandwich with Swiss and Canadian/American Cheese on grilled Artisan Bread.
Why mess with perfection?

Breakfast Hammy 

WHAT YOU NEED TO MAKE A BREAKFAST HAMMY
Just a few simple ingredients, two skillets and about 10 minutes of your time.  There is nothing complicated about this tasty sandwich.
  • small knob butter
  • 2 large eggs
  • 1 TBS cream
  • Salt and black pepper to taste
  • 2 thick slices Texas toast bread
  • 1 TBS softened butter for spreading
  • 4 thin slices of deli ham
  • 1 1/2 slices of processed American cheese
  • 1 1/2 slices of Swiss cheese

I like to use free range eggs. I source them very carefully. I know that not all free range eggs are exactly or totally free range, but I make sure of my source and make sure that the hens which lay them have a place to run about.  You can use whatever eggs you wish to however. Its your choice.
I chose to add some cream to my eggs prior to scrambling them to give them a nice hit of richness. This isn’t totally necessary.  You can add milk, or you can add nothing.
You could also add a bit of interest by adding some lightly sauteed peppers and onions, or even some minced chives.

I used Grandpa Sikorski’s Deli Ham, sliced for sandwiches not shaved.   The cheese I used was Kraft Extra Cheddar Cheese slices. These do not come individually wrapped, but they taste the  most like American cheese and are a exemplary processed cheese product.
I used sliced actual Swiss cheese. The sweet nuttiness of it goes very well in this sandwich with everything else.
My bread was Dempster’s. Texas Toast. White bread. It also comes in whole wheat.  A nice sour dough bread, cut thick, would also be very nice with this sandwich.

HOW TO MAKE A BREAKFAST HAMMY
Its not all that difficult or complicated.  You will need two skillets. One for cooking the eggs and one for cooking the sandwich.



Beat the eggs together with the cream in a small bowl until thoroughly combined.



Melt the butter in a small skillet. Once it begins to foam add the eggs. Scramble according to your preference. Season with salt and black pepper. Set aside and keep warm.



Take a large skillet and fry the ham, heat it through, just until it is a bit crispy on the edges. Remove to the skillet with the eggs and keep warm.


Breakfast Hammy 
Butter two slices of bread on the outside with butter. Place both slices butter side down in the skillet, over medium heat. Add the American cheese to one slice and the Swiss cheese to the other.



Leave to brown on the buttered sides for a few minutes until golden brown, then add the sliced ham to the side with the American cheese.



Spoon the scrambled eggs on top of the ham and place the Swiss cheese covered slice of bread over top of the eggs, cheese side down and golden brown side up.  Cut in half on the diagonal and serve immediately.



Breakfast Hammy 
This was incredibly tasty!  And incredibly filling.  I was full after only eating half of the sandwich. I would suggest if you are not a huge eater that you share it with someone.
You could enjoy half of one of these with a hashbrown on the side and be totally happy.  Also if you wanted to jazz things up a bit you could scramble some finely chopped peppers and or onions in with the eggs. You do you.

Whether you choose to enjoy a tasty hot egg sandwich for breakfast, brunch, lunch or supper, there is no end to the ways in which you can prepare one. Here are a few other tasty options!
EGG IN THE HOLE BREAKFAST SANDWICH This Egg in the Hole Bacon Sandwich Recipe is sized just for one and it is  easy to make and really delicious.  It is also easily adaptable to whatever you have in the house, bread, veg, protein, cheese, etc.  You can also multiply the recipe easily to feed more if you wish! Bacon, eggs, cheese and a whole grain bread. Works for me!  But if you are a veggie, then use some form of vegetable protein rather than the bacon. It will still be delicious!


BREAKFAST EGG ROLLS – These are a type of a wrap sandwich, which is basically a quick and tasty omelet wrapped up in a flour tortilla, but not in the usual sense. There is a unique twist. The omelet mixture is poured into a skillet and topped with a few things, and then topped with a tortilla which has been spread with tomato paste.  This cooks for a bit and then the whole thing is rolled up ready to cut on the diagonal and enjoy.

This was delicious, but incredibly filling. I could only eat half of it and I was satisfied. I suggest you only make one of these when you are incredibly hungry,, or share it with someone! Deliciousness shared is deliciousness doubled!
