Học nấu ăn với chè đậu xanh nước cốt dừa ngon nhất
Nguyên liệu:
- 500 g đậu xanh cà không vỏ, 200 g đường phèn bột, 1 ống vani.
- 1 kg dừa nạo vắt lấy nước, 10 g bột báng, 1 thìa soup bột năng, 1 thìa soup đường cát, 1 thìa cà phê muối.
Cách chế biến:
- Đậu xanh ngâm với nước khoảng 3 tiếng, nhặt bỏ đậu sâu, đãi lại nhiều lần rồi để ráo nước. Cho đậu vào nồi, đổ nước lọc ngập mặt đậu khoảng 1 cm, thêm 1 thìa cà phê muối, 1 thìa gừng giã nát rồi nấu chín đậu.
- Khi nước sôi, dùng thìa vớt hết phần bọt, tiếp tục đun với lửa nhỏ, thỉnh thoảng dùng đũa đảo đều để đậu tơi ra và không bị cháy.
- Khi đậu nhừ, dùng đũa cái đánh cho đậu thật tơi và nhuyễn. Tiếp đến cho đường và vani vào. Tiếp tục đánh đến khi đậu sánh lại, có vị ngọt vừa là được.
- Cho chè vào hộp, để nguội rồi cho vào ngăn mát tủ lạnh để dành ăn dần.
- 10 g bột báng ngâm nở. Dừa nạo vắt lấy nước cốt. Thêm vào 1 thìa soup bột năng, 1 thìa soup đường cát, 1 thìa cà phê muối đánh tan, đun với lửa nhỏ. Sau đó cho bột bánh vào, tiếp tục đun đến khi nước cốt dừa sánh lại, sôi nhẹ là được.
- Múc chè ra ly, cho ít nước cốt dừa vào và dùng lạnh. Nếu thích bạn có thể cho thêm đá lạnh vào.
